Description

The BEST Cod Taco recipe! Buttery baked cajun cod flaked apart and served on a tortilla with tartar sauce, pickled onions and fresh dill.

Baked Cod:

  • 1 pound fresh cod fillets (approx. 1 inch thick)
  • kosher salt and ground black pepper
  • 4 tablespoons butterroom temperature
  • 2 teaspoon garlicminced
  • 23 teaspoons cajun seasoning 

Light Lemon Slaw:

  • 2 cups angel hair slaw
  • 2 tablespoons mayo
  • 2 teaspoon lemon juice
  • 1 teaspoon white wine vinegar
  • pinch of kosher salt

Instructions

  1. Preheat oven to 425 degrees F. 
  2. Prep Cod: Place cod filets in a baking dish. Pat dry with clean paper towel. Season with kosher salt and ground black pepper. In a small bowl combine butter and garlic. Take garlic butter and divide between cod filets, spreading over the top of each piece. Season cod fillets with cajun seasoning.
  3. Cook Cod: Place in the oven, middle rack and uncovered. Let bake approx. 15-20 minutes or until the internal temp reaches approx. 140 degrees F. (for smaller/thinner pieces this will take closer to 14-15 minutes while thicker pieces will take closer to 20-21 minutes). 
  4. Prep Toppings: Meanwhile, prepare Light Lemon Slaw by combining ingredients in a small bowl and tossing. Taste and add any additional mayo or lemon, as desired. Prepare other taco toppings as well so they are ready to go when the cod comes out of the oven.
  5. Build Tacos: Once cod is finished cooking, remove from oven and let cool slightly. Flake the cod apart a bit so you have smaller, bite-sized pieces for the tacos. Take your favorite tortillas, add some lemon slaw, top with flaked cod, tartar sauce, pickled onions, fresh dill and cracked pepper. 

Notes

  • Cajun Seasoning: I used a store-bought cajun seasoning, but feel free to use homemade. Or, alternatively, you can use a different seasoning if you prefer. Cod is just such a mild fish I wanted a little pop of flavor here so I highly recommend.
