Ingredients

Scale

Greek Turkey Burgers:

  • 1 pound ground turkey
  • 1/4 white onion, shredded & excess water squeezed out
  • 23 tablespoons frozen butter, shredded*
  • 2 teaspoons garlic, minced
  • 1 tablespoon mayonnaise
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon lemon zest
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh spinach, chopped
  • 1/4 cup kalamata olives, chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
  • 1 tablespoon extra virgin olive oil (for cooking, do NOT add to the turkey burger mixture)

Serving Suggestions:

Instructions

  1. Prep: Preheat oven to 400 degrees F.
  2. Make Burgers: Put all of the turkey burger ingredients in a large bowl and mix to combine. Use your hands to form turkey mixture into 4 large turkey patties.
  3. Sear: Bring a large cast iron skillet to a medium-high heat, add the olive oil, and swirl to coat the bottom of the pan. Once hot, add the turkey burgers to sear for 1-2 minutes on each side. Depending on the size of your pan, you may need to cook the burgers in batches.
  4. Bake: After searing the burgers, move the entire pan to the preheated oven and let them bake for 8-10 minutes or until fully cooked to an internal temperature of 165 degrees F (use a meat thermometer).
  5. Serve: Enjoy your turkey burger with all your favorite toppings or skip the bun and serve with some Greek Cucumber Salad!

Notes

  • *Butter: we love keeping a stick of butter in the freezer, so we always have some on hand when making burgers.
  • Dairy-Free: use a plant-based butter, omit feta cheese or use a dairy-free alternative, and serve with dairy-free tzatziki sauce.
  • Gluten Free: simply use your favorite gluten-free hamburger buns or enjoy without a bun.
  • Storage: leftover turkey burgers can be kept in an airtight container in the fridge for 4-5 days.
  • To Grill: feel free to grill these if you prefer – Place in the freezer for 20 minutes (this ensures it will be easy for you to lift them off the cookie sheet and they will hold their shape on the grill).  Place burgers on clean grill grates over direct heat and close the lid. Let cook 5-6 minutes per side or until they reach 160 degrees F. internal temperature. Remove and let rest 5-10 minutes. The burgers will continue cooking as they rest and internal temp will continue rising to 165 degrees F.
