Description

A classic, go-to house salad recipe that pairs well with any meal! Made with common ingredients but has exceptional taste!


Ingredients

Creamy Italian Dressing:

  • 1/3 cup extra virgin olive oil (sub avocado oil)
  • 2 tablespoons white wine vinegar
  • 3/4 teaspoon kosher salt
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon lemon zest, more to taste
  • 1 small garlic clove
  • 1 1/2 teaspoon dried basil
  • 1 1/2 teaspoon dried thyme
  • 2 1/4 teaspoon dried oregano 
  • 2 teaspoons dried parsley
  • 1/4 cup parmesan cheese, grated
  • 2 tablespoons high quality mayo, more as needed

House Salad:

  • 46 cups mixed greens
  • 2 cups cherry tomatoes, halved
  • 2 cups cucumber, sliced and quartered
  • 1/2 cup red onion, thinly sliced
  • 1 cup parmesan cheese, shaved
  • 12 cups croutons, regular or gluten-free

Instructions

  1. If making, add the Creamy Italian Dressing ingredients to a food processor. Mix until well combined and smooth. Taste and add additional salt or pepper, as desired. Set aside. 
  2. Between four bowls divide the mixed greens, cherry tomatoes, cucumber, red onion, parmesan cheese, and croutons. 
  3. Serve dressing on the side, so people can add as much as they desire.

  • Salad Ingredients: the measurements for the ingredients in the salad are a suggestion – feel free to increase or decrease, depending upon what you prefer.
