Description

Our classic Smoked Cornbread recipe is the perfect side dish for the whole family to enjoy with a cozy bowl of chili or any main dish!


Ingredients

Scale
  • 1 cup unsweetened almond milk (sub regular milk)
  • 1 teaspoon fresh lemon juice
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/8 teaspoon kosher salt
  • 1/2 cup + 2 tablespoons butter, (1/2 cup melted & 2 tablespoons solid)
  • 1/3 cup coconut sugar
  • 4 tablespoons honey
  • 2 eggs
  • serving: butter and honey

Instructions

  1. Prep: Preheat smoker to 350 degrees F.
  2. Buttermilk“: Combine unsweetened almond milk and lemon juice in a small bowl and set aside*.
  3. Dry Ingredients: In a large bowl, combine the cornmeal, flour, baking powder, baking soda, coconut sugar and salt.
  4. Wet Ingredients: In a separate mixing bowl, combine the melted butter, honey, eggs and the “buttermilk” mixture. Whisk to combine.
  5. Combine: Mix the wet and dry ingredients together.
  6. Prepare Skillet & Smoke: Melt 2 tablespoons butter in skillet and swirl to coat the skillet. Pour batter into the skillet. Place the entire skillet on the smoker, close the lid, and let it smoke for 25-30 minutes or until a toothpick comes out clean.
  7. Cool + Serve: Let it cool in the skillet (about 10 minutes) and then remove and finish cooling. Highly recommend serving with our Smoked Chili!

Notes

  • *Buttermilk: feel free to use one cup of regular buttermilk in place of the almond milk and lemon juice.
  • Dairy-Free: simply use a plant-based butter instead of regular butter.
