Description

Sweet Potato Mash – a simple and delicious side dish that is easy enough for a busy weeknight dinner or add it to any holiday meals! 


Ingredients

Scale
  • 3 pounds of sweet potatoes (roughly 3 medium-sized sweet potatoes), cut into medium-sized chunks
  • 1/2 teaspoon kosher salt
  • 4 tablespoons ghee
  • 3/4 cup unsweetened almond milk
  • 1/2 tablespoon ground cinnamon
  • 1/4 cup real maple syrup

Instructions

  1. Bring a large saucepan or stock pot of water to boil.
  2. Add potatoes and allow to boil/simmer for 15 minutes or until very soft.
  3. Once potatoes are soft, drain in a collander, and place the potatoes in a medium/large bowl.
  4. Add salt, ghee, almond milk, cinnamon and maple syrup to the bowl. 
  5. Using a hand mixer, combine ingredients on medium speed until potatoes are smooth.
  6. Taste and add additional maple syrup, as desired.
  7. Serve immediately.

Notes

  • Peeled potatoes: Feel free to peel your potatoes or leave the skin on, whatever you prefer.
  • Hand mixer: we love the smooth texture the hand mixer provides, but you can also use a potato masher or toss them in the bowl of a stand mixer.
