Sugar Rim: Place 1 tablespoon granulated sugar on a small plate. Rub 1 lime wedge around the rim of a short glass and then press rim into the sugar to coat.
Muddle: Place 5 blueberries and 3-4 mint leaves into the bottom of the same glass and muddle. Add ice cubes and set aside.
Blend: In a small food processor or blender, blend together the remaining 5 blueberries, 1 ounce white rum, 1 ½ tablespoons lime juiceand1 ½ tablespoons simple syrup. Pour over ice.
Serve: Add a splash of tonic water and then garnish with mint sprigs, extra blueberriesand a lime wedge.

Pitcher Instructions: Make 4 servings of this blueberry mojito by using the following quantities; 1/4 C granulated sugar, 4 lime wedges, 1/4 C blueberries, 16 mint leaves, 4 oz white rum, 6 Tbs lime juice, 6 Tbs simple syrup, and 8oz of tonic water. Blend and muddle as instructed and pour mixture into a pitcher to be divided 4 ways.
