Broiled Tomatoes with Cheese are an easy, 15-minute appetizer or side dish made with thick slices of fresh tomatoes topped with a creamy parmesan, mayo, and onion mixture, then broiled until golden, bubbly, and slightly crisp. Ingredients
2large beefsteak tomatoescut into 3 thick slices
½cupmayo
½cupparmesan cheeseheaping, shredded
¼cupyellow oniondiced
½teaspoonoregano
⅛teaspoonkosher salt
Instructions
Prep Oven: Turn oven to broil. Place 2 large beefsteak tomatoes (sliced) on a baking sheet.
Cheese Mixture: In a medium mixing bowl, combine ½ cup mayo, ½ cup parmesan cheese, diced onion, ½ teaspoon oregano and ⅛ teaspoon kosher salt.
Spread: Divide mayo mixture evenly between the six tomato slices, add a dollop or two to each and flatten out, spreading it to the edges of each tomato.
Broil: Move to the oven and broil on high for approximately 2 minutes, or until the mayo mixture is starting to brown and bubble (watch closely, oven temps vary).
