Super easy No Bake Chocolate Peanut Butter Energy Balls that only require 8 real, simple ingredients and about 10 minutes to make!
Ingredients
1 ½cupsrolled oats
¾cupcreamy peanut butter
⅓cupmaple syrup
2tablespoonscollagen powder
2tablespoonsmini chocolate chips
1tablespoonchia seeds
1tablespooncocoa powder
1tablespoonground flax
pinchkosher salt
Instructions
Combine: In a large bowl, add 1 ½ cups rolled oats, ¾ cup creamy peanut butter, ⅓ cup maple syrup, 2 tablespoons collagen powder, 2 tablespoons mini chocolate chips, 1 tablespoon chia seeds, 1 tablespoon cocoa powder, 1 tablespoon ground flax, and a pinch kosher salt. Mix to combine. If you feel it is too wet - add more almond flour. If you feel it is too dry - add a splash of maple syrup.
Roll: Use a tablespoon-size cookie dough scoop to create evenly shaped balls. Do this until the entire mixture is used. Place the energy balls on a large plate and move to the fridge for 20-30 minutes.
Serve: Enjoy right away or store for later!
Notes
Gluten-Free: make sure the rolled oats being used are certified gluten-free.
Collagen: feel free to sub for your protein powder of choice!
Storage: keep energy balls in an airtight container in the fridge for up to 1 week.
Freeze: place in a freezer-safe container, remove as much air as possible, and freeze for up to 3 months. Thaw in the fridge overnight.
