How To Make Chocolate Chip Cookie Dough Bites

Step 1: Place all of the ingredients (except the chocolate chips) in a food processor.

Step 2: Blend on high until fully combined with a dough-like texture.

Step 3: Pour out into bowl and stir in the chocolate chips.

Step 4: Use a tablespoon-sized cookie dough scoop and roll out the bites in your hand.
Tips for Best Texture
- If bites feel too wet, add more almond flour 1-2 tablespoons at a time until you have reached your desired texture.
- If bites feel to dry, add more maple syrup 1 tablespoon at a time until you have reached your desired texture.

Ingredients
- 1 cup almond flour
- 1/2 cup medjool dates, pit removed, roughly chopped (approx. 8 dates)
- 1/2 cup creamy peanut butter, sub cashew butter
- 1/4 cup real maple syrup
- 2 scoops collagen powder
- 1 tablespoon ground flax
- 1/2 teaspoon ground cinnamon
- 1/3 cup chocolate chips
Instructions
- Combine 1 cup almond flour, 1/2 cup medjool dates, 1/2 cup creamy peanut butter, 1/4 cup real maple syrup, 2 scoops collagen powder, 1 tablespoon ground flax and 1/2 teaspoon ground cinnamon in food processor (do not add the chocolate chips. Process on high, scraping down sides as you go, until mixture is combined and dough-like.
- Pour out into bowl and stir in 1/3 cup chocolate chips.
- Take 1 tablespoon of dough and form ball between your hands. We use a cookie dough scoop for this process.
- Enjoy right away or store in the freezer or refrigerator for later.
Notes
- Storage – Fridge + Freezer: keep in an airtight container in the fridge for up to a week or freeze in a Stasher Bag for 3 months (don’t forget to label your container so you don’t forget about them!).
- Dairy-Free: use a dairy-free chocolate chip – I like the Enjoy Life brand.

Made them with peanut butter instead of cashew and these are a real winner. I’ve tried A LOT of healthy cookie ball recipes, but none with a texture like these. Almost like an RX bar, but without the stickiness. Superb.
