Instructions
Marinate Shrimp: In a large bowl, whisk together 3 tablespoons lime juice, 2 tablespoons olive oil, zest of 1 lime and ½ - 1 teaspoon kosher salt. Add ½ pound large shrimp (thawed) and ¼ cup fresh cilantro to the bowl; toss to coat. Let shrimp marinate 20-30 minutes.
Make Slaw: While the shrimp marinates, combine ¼ cup Chipotle Lime Mayonnaise, ¼ cup sour cream, 1 tablespoon lime juice, 1-2 teaspoons coconut sugar and 1 teaspoon garlic in a small bowl; whisk to to combine. Place 3 cups green cabbage and ¼ cup green onions in a large bowl. Pour mayo mixture on top. Add a pinch kosher salt. Toss to combine. Add ½ cup fresh cilantro right before serving.
Pan Fry Shrimp: Bring a large cast iron skillet to medium-high heat. Add a drizzle of olive oil; swirl to coat the pan (or the best grilled shrimp). In batches, if necessary, add shrimp and cook 1-2 minutes per side (depending upon how thick or big they are) or until they are no longer translucent. Remove from pan and set on a plate.
Make Tacos: Build your tacos by taking a tortilla of your choice and adding some slaw. Top that with shrimp, grilled corn, red onion, bacon, avocado, cotija cheese and more fresh cilantro. Squeeze fresh lime juice over top and serve!
