Guinness Beef Stew - a cozy and delicious Guinness Beef Stew recipe that is perfect for St. Patricks Day! Serve over mashed potatoes!
Ingredients
2-3poundsstew meat
kosher salt and ground black pepper
4ouncespancettacubed
1yellow oniondiced
1tablespoongarlicminced
2-3large carrotscut into 1 inch pieces and then halved
2-3celery stalkscut into 1 inch pieces
3cupschicken brothor beef broth
14.9ouncesGuinness beer
2-3sprigsfresh thyme
1tablespoontomato paste
2teaspoonsworcestershire sauce
2bay leaves
2-3handfulsbaby yukon gold potatoes
10ouncespearl onionspeeled
Instructions
Season Meat: Place 2-3 pounds stew meat on a large plate. Pat dry with a clean paper towel. Season generously with kosher salt and ground black pepper. Set aside.
Cook Pancetta: Bring a 5.5qt Dutch Oven to medium-high heat. Add 4 ounces pancetta and move around the pan 1 minute. Reduce heat to medium and let the fat render, about 3-5 minutes (moving the pancetta around every so often). Use a slotted spoon to remove the pancetta and place on a plate; set aside.
Sear Meat: Turn heat back up to medium-high. In batches, sear both sides of the stew meat in the rendered fat. Remove from pan and set aside on a plate.
Sauté: Add diced onion and 1 tablespoon garlic. Move around the pan until the garlic is fragrant and the onion softens, about 1 minute. Add carrots and celery. Move around pan 1 minute. Add ¼ cup of the broth to deglaze the pan. Use a spatula to scrape up any bits from the bottom of the pan.
Combine + Simmer: Add the remaining broth, 14.9 ounces Guinness beer, 2-3 sprigs fresh thyme, 1 tablespoon tomato paste, 2 teaspoons worcestershire sauce, 2 bay leaves, 2-3 handfuls baby yukon gold potatoes, pancetta and stew meat (along with any juices that have settled on the plate). Cover and let gently simmer 2-3 hours.
Onions: About 20 minutes before you are going to serve, add 10 ounces pearl onions and cover to let simmer.
Adjust: Taste and add additional salt, as-needed (how much you need will depend upon what brand of broth you used, etc.).
Steak Bites: alternatively you could use sirloin steak and cut into 1 inch pieces.
Broth: I used chicken broth in the photos, I personally prefer the flavor.
Beer: Guinness has a non-alchololic version of their beer if you prefer!
Potatoes: feel free to omit the potatoes if you want - especially if you are serving over mashed potatoes - totally up to you.
Firmer Veggies: if you like your veggies more firm then feel free to add the carrots and celery later on in the cooking process (maybe about 40 minutes before serving). Totally up to you!
