1pounddried navy beans
3-4medium carrotspeeled and sliced
3celery stalkssliced
1medium yellow oniondiced
2cupsham meatdiced

Instructions
Make Ham Stock: Add 1 ham bone, 8-10 cups water and 1 bay leaf to a large Dutch oven. Bring to a boil then reduce to simmer and cover for 1 hour and 30 minutes.
Cook Beans: Add 1 pound dried navy beans, cover and return to simmer for 4-6 hours, stirring occasionally. Remove ham bone - option to scoop out the bone marrow, if any, as it adds an amazing flavor to the soup!
Combine: Add carrots, celery, onion and ham meat. Let simmer 20-30 minutes or until vegetables are firm but soft.
Adjust: Taste and add salt and pepper as desired - ham is pretty salty on its own and everyone is different when it comes to salt preferences, so taste and add as needed.
Serve: Ladle into individual bowls and enjoy!
Notes
Serving: serve with some crusty bread and a House Salad for a delicious meal!
