Mussels in White Wine Sauce
recipe is a classic dish that is packed with flavor! Don't forget to sop up the sauce with some delicious bread!
Ingredients

fresh mussels

butter
sub ghee
▢
1/4
cup
shallots
minced (sub red onion)

teaspoons
garlic
minced
▢

tablespoon
extra virgin olive oil
▢
3/4
cup
dry white wine
I used a chardonnay

teaspoons
fresh lemon juice
▢
1/2
teaspoon
kosher salt
▢
1/4
teaspoon
ground black pepper

optional 1/4 cup unflavored

freshly chopped parsley

optional 1/2 teaspoon smoked paprika

grilled bread
Instructions
Soak mussels in cold water 30 minutes prior to cooking.
In a deep sauté pan, add butter and let melt. Add shallots, garlic, and olive oil.
Let shallots sweat and soften - about 3 minutes while continuously stirring.
Add white wine, lemon juice, salt and pepper. Let simmer about 5 minutes.
Add parsley, creamer, and paprika (if using). Taste and adjust any salt, as desired.
Stir and let gently simmer another 2 minutes.
Add mussels and cover immediately - let simmer for 2 minutes or until mussels open.
Spoon mussels into shallow bowl, pour sauce over the top and serve with
grilled bread
and lemon wedge.
Notes
Mussels
: I highly recommend using fresh mussels, purchased the same day as cooking.
Pan
: make sure you are using a pan that has a cover that fits tightly.
