Prep: Preheat oven to 400 degrees F. Rub about 1 tablespoon of softened butter on the inside of the ramekins.
Filling: Put about 3/4 cup of shredded mozzarella in each ramekin. Add about 2-3 tablespoons of quartered pepperoni or any other desired fillings to each ramekin. Then add about a 1/4 cup of pizza sauce on top of the fillings.
Pizza Dough: Spread out the pizza dough and cut into 6x6 inch squares. Place each square of dough over each ramekin and pinch the sides to secure on top - it's okay that the corners hang down a bit.
Bake: Place all of the ramekins on a large baking sheet and bake in the preheated oven for 10 minutes. While they bake, melt the remaining tablespoon of butter. Carefully brush the tops of the pizza pot pies and sprinkle some parmesan cheese on top. Continue baking for 2 more minutes.
Serve: Carefully place a plate on top of one ramekin and flip it all over allowing the pizza pot pie to come out of the ramekin and on to the plate. Feel free to garnish with fresh basil, oregano and more grated parmesan.

Pizza Dough: keep it easy and use store-bought pizza dough or feel free to make a batch of our homemade pizza dough.
Filling Options: feel free to make these your own with whatever fillings you want! A veggie pizza would be amazing, sausage, etc.
Dairy-Free: feel free to swap out the reg. cheese for your favorite dairy-free options.
