Roasted Garlic Hummus - a delicious, easy roasted garlic hummus recipe that is packed with flavor and makes a great appetizer!
Ingredients
1headgarlic
3tablespoonsextra light olive oildivided
1teaspoonbuttersub plant-based butter or ghee
16ounceschickpeasdrained and rinsed
¼cuptahini
3tablespoonsfresh lemon juice
2-3tablespoonswatermore as-needed
½teaspoonkosher saltmore to taste

Instructions
Prep: Preheat oven to 400℉.
Roast Garlic: wrap 1 head garlic in aluminum foil or parchment paper with 1 tablespoon olive oil, 1 teaspoon butter, and a sprinkling of kosher salt and place in the oven (40-45 min at 400℉). Let cool and remove the garlic cloves of at least one whole bulb (option to add more, if you want).
Blend: In a food processor, add the roasted garlic cloves, 16 ounces chickpeas, ¼ cup tahini, 3 tablespoons fresh lemon juice, 2-3 tablespoons water, 2 tablespoons olive oil and ½ teaspoon kosher salt in a blender or food processor. Blend until smooth.
Option to thin it out: Add additional water to thin (1 tablespoon at a time) and blend until you have reached your desired consistency. Taste and add any additional salt, as needed.
Serve: Enjoy with fresh vegetables and pita bread for dipping or add to your favorite sandwich or salad!
Notes
Garlic - we love the added flavor of oven roasted garlic cloves, but you could also just toss in some minced garlic if you don't have time to roast it.
Storage - place hummus in an airtight container and store in the refrigerator for up to one week.
