Prep: Preheat oven to 415℉ and prepare a large parchment-lined baking sheet.
Bake Broccolini: Trim the bottom ½ inch or so off of the stems of the ½ - 1 pound fresh broccolini. Place the broccolini on the prepped sheet pan and drizzle with olive oil; massage with your hands to fully cover them in oil. Sprinkle with salt and toss. Move to the oven for 8 minutes.
Add Shrimp: Remove pan and place 20 raw jumbo shrimp on the other side of the sheet pan and brush lightly with olive oil and sprinkle with kosher salt. Return to oven for 5 minutes then flip shrimp and cook for an additional 2-3 minutes or until fully cooked.
Prawns: If you use large prawns, like I did, they will need to be cook approximately 8-10 minutes; jumbo shrimp will need to be cooked close to 6-8 minutes.
