1/4cup+ 2 tablespoons mayonnaise
3-4teaspoonspickle juicerecommend bread & butter pickle juice
1teaspoonyellow mustard
1/2teaspoondijon mustard
1/2teaspoonwhite vinegar
1/4 - 1/2teaspoonkosher salt
pinchof ground black pepper
toppings: paprikadill leaves, or fresh chives
Instructions
Prep: Preheat smoker to 325℉.
Smoke: Place 12 eggs directly on the grill grates of the preheated smoker and let eggs smoke for 30-35 minutes. Transfer eggs to an ice bath (large bowl of ice and cold water) to cool for a few minutes, then peel the shell off each egg. Place peeled eggs on a small baking sheet and return to smoker at 190℉ for about 10 minutes. To drop the temperature of the smoker quickly, simply open the lid for a few minutes. Carefully remove the tray of eggs from the smoker.
Egg Yolks: Now use a sharp knife to cut each egg in half, lengthwise. Use a small spoon to pop out the yolks and place them in a medium bowl. Set the egg whites aside.
Combine: Add 1/4 cup + 2 tablespoons mayonnaise, 1/4 - 1/2 teaspoon kosher salt, 1 teaspoon yellow mustard, 1/2 teaspoon dijon mustard, 1/2 teaspoon white vinegar, 1/4 - 1/2 teaspoon kosher salt, and a pinch of ground black pepper to the mixing bowl with the egg yolks. Stir to combine, with the option of using an electric hand mixer to make the mixture really smooth. Give the mixture a taste and adjust salt, mayo, or pickle juice, as desired.
Fill Eggs: Spoon the egg yolk mixture into the halved egg whites.
Serve: Garnish deviled eggs with fresh chives or dill and paprika. Enjoy immediately!
