Our simple Smoked Potatoes recipe is full of all the best flavors and perfect for enjoying with any main course!
Ingredients
1.5lbsbaby Yukon gold potatoes or baby red potatoesquartered or 1-inch chunks
1tablespoonavocado oilsub extra virgin olive oil
1/2teaspoonkosher salt
1/4teaspoonground black pepper
1/4teaspoondried oregano leaves
1/4teaspoongarlic powder
1/4teaspoononion powder
1/4teaspoondried marjoram
1tablespoonbutterregular or plant-based
Instructions
Prep: Preheat the smoker to 225 degrees F.
Season Potatoes: Place potatoes in a medium mixing bowl. Add 1 tablespoon oil, 1/2 teaspoon salt, 1/4 teaspoon pepper, 1/4 teaspoon dried oregano, 1/4 teaspoon garlic powder, 1/4 teaspoon onion powder and 1/4 teaspoon dried marjoram. Stir to coat the potatoes.
Foil Boat: Create an aluminum foil boat and spray the bottom with non-stick cooking spray or olive oil. Put the potatoes inside. Place a tablespoon of butter on top.
Smoke: Place potatoes on the smoker and close the lid. Let smoke for 1.5 - 2 hours. Increase smoker temp to 350 degrees F. and let potatoes continue to cook for 20-30 minutes - or until they have reached your desired softness.
Serve: Remove from smoker and serve immediately.
Notes
Cook Time: cooking times can vary a lot with smoking recipes simply because there are so many variables at play which can impact time: humidity, temperature, hot spots on the grill, wind, etc. After testing on a Traeger Smoker we found that after 3+ hours at 225 degrees F the potatoes were smokey, but not soft so we finished cooking them at a higher temp. This resulted in a smokey, soft potato - feel free to cook longer or less depending upon your smoker and your desired softness.
Add-Ins: feel free to add in some onions or garlic - both would be good in here!
Russet Potatoes: feel free to use russet potatoes if you want! They may cook a little faster, so just test the potatoes often for doneness!
