Instructions
Prep: Preheat smoker to 225 degrees F. Place the turkey wings on a large baking sheet and pat dry with paper towels. Drizzle turkey wings with olive oil and rub into all the nooks and crannies.
Dry Rub: Place all the dry rub ingredients in a small bowl; mix to combine. Use this dry rub to coat the outside of the turkey wings.
Smoke: Put the seasoned wings directly on the hot grill grates and smoke for about 1 hour 15 minutes to 1 hour 30 minutes or until their internal temperature at the thickest part of the wing reaches 160 degrees F (use an instant-read thermometer).
Sear: Bring your grill to HIGH heat and ensure grill grates are clean. Transfer turkey wings and sear 1-2 minutes or until char marks form.
Rest: Let the meat rest for about 5-10 minutes, during this process the internal temp will reach the desired 165 degrees F.
Serve: Enjoy with any of your favorite side dish recipes!
Notes
Dry Rub: highly recommend using our quick and easy smoked turkey dry rub recipe, but you can also use your favorite store-bought version.
Sear: if you don't have a grill - you can easily do this in a cast iron skillet, under a broiler or you can bring the smoker up to 450 degrees and sear right on the smoker (it just takes a bit of time for it to come up to temp).
