Southwest Vinaigrette - a light and delicious southwest vinaigrette recipe that is perfect for a southwest salad! So easy to make!
Ingredients
⅓cuplight olive oil
2tablespoonswhite vinegarsub rice vinegar
1tablespoonlime juicemore if desired
2teaspoonsground cumin
½teaspoonkosher salt
½teaspoononion powder
½teaspoongarlic powder
½teaspoondried oregano leaves
½teaspoonpaprika
⅛teaspoonground black pepper
Instructions
Combine: In a small bowl, add ⅓ cup light olive oil, 2 tablespoons white vinegar, 1 tablespoon lime juice, 2 teaspoons ground cumin, ½ teaspoon kosher salt, ½ teaspoon onion powder, ½ teaspoon garlic powder, ½ teaspoon dried oregano leaves, ½ teaspoon paprika, and ⅛ teaspoon ground black pepper. Whisk until olive oil emulsifies; about 1-2 minutes.
Or Shake in Mason Jar: Alternatively, place in a wide-mouth mason jar, close lid tightly and shake until well combined.
Storage: This dressing can easily be made in a mason jar, just add the ingredients, give it a good mix, and then you can store it in the fridge for up to a week. The olive oil will solidify when chilled so make sure you just set it on the counter for a bit before serving and then give it another good shake to ensure everything is mixed.
Smokey: feel free to use smoked paprika or smoked garlic powder if you want!
