Creamy Base: In a medium bowl combine 1 cup sour cream, 8 oz cream cheese and 1 oz packet taco seasoning. Stir to combine if cream cheese is soft enough, otherwise use an electric hand mixer to combine until smooth. Place in the bottom of a small casserole dish (I used a 10.5" x 7.5") and spread out evenly.
Toppings: Top with 2 cups colby jack cheese, 1 cup roma tomatoes, 1/2 cup black olives and 1/4 cup green onions.
Serve: Enjoy with your favorite tortilla chips!

Other Topping Ideas: shredded lettuce, jalapeños, etc. are all great additions - feel free to make it your own!

Dairy-Free: you can sub in some dairy-free sour cream, dairy-free cream cheese and dairy-free shredded cheese of choice if you want to make this dairy-free.
