Make Seasoning: In a small bowl, add 4 teaspoons chili powder, 1 teaspoon ground cumin, 1 teaspoon garlic powder, 1 teaspoon kosher salt, ½ teaspoon onion powder, ½ teaspoon paprika, ½ teaspoon dried oregano, ¼ teaspoon ground black pepper, and ⅛ teaspoon cayenne pepper. Mix to combine and set aside.
Cook Beef Mixture: Bring large cast iron skillet to a medium-high heat and add 1 pound ground beef. Move around pan until fully cooked. Drain grease and add taco seasoning, 1 tablespoon tomato paste and 1 tablespoon water. Mix to combine.
Broil Peppers: Turn the oven broiler to HIGH. Place bell pepper halves on a baking sheet, open side up, and rub lightly with olive oil. Place under broiler for about 5 minutes or until they just start to char.
Stuff Peppers: Carefully remove the cooked peppers from the sheet pan and place on a plate. Stuff with the taco meat.
Serve: Add any desired toppings and serve immediately!

Taco Seasoning: highly recommend making our homemade taco seasoning recipe, but you can also use a store-bought taco seasoning.
Meal prep: This is a great recipe to meal-prep! Make the taco meat ahead of time, have the toppings on hand and then all you have to do is pop the bell peppers in the oven for 5 minutes and warm the taco meat! Dinner is ready!
