This quick and easy Teriyaki Shrimp Sheet Pan Dinner will be on the table in less than 30 minutes! Tender shrimp, roasted veggies, and flavorful teriyaki sauce make the perfect combination for a busy weeknight dinner.
Ingredients
4cupsfresh broccoli florets
1red bell peppercut into 1-inch pieces
½red onioncut into 1-inch pieces
1tablespoonextra virgin olive oilsub avocado oil
kosher salt and ground black pepper
1poundraw jumbo shrimpsub prawns (shells removed and tails on or off)
Bake Broccoli: Put 4 cups fresh broccoli florets, bell pepper, and onion on a large, rimmed sheet pan and drizzle with 1 tablespoon extra virgin olive oil; massage with your hands to fully cover them in oil. Sprinkle with kosher salt and ground black pepperand toss. Move to the oven for 8 minutes.
Add Shrimp: Remove pan and move the veggies to one side of the pan. Toss 1 pound raw jumbo shrimp in a little teriyaki sauce and place them in a single layer on the other side of the sheet pan. Return to oven for 4 minutes, flip shrimp and cook for an additional 2-3 minutes or until fully cooked.
Serve: Divide between 4 bowls and feel free to serve over cooked rice or homemade cauliflower rice, and a drizzle of teriyaki sauce!
Prawns: If you use large prawns, like I did, they will need to be cook approximately 8-10 minutes; jumbo shrimp will need to be cooked close to 6-8 minutes.
