Our tender and cheesy Turkey Cheddar Meatball recipe is the perfect family-friendly meal that everyone is going to love!
Ingredients
1poundground turkey
1/3 - 1/2cupsharp cheddar cheesecut into small chunks
1/4cupwhite onionshredded & moisture squeezed out
1/4cupbreadcrumbs
2tablespoonsfrozen buttershredded
1tablespoonmayo
2teaspoonsgarlicminced
1/2teaspoonkosher salt
1/8teaspoonground black pepper
1tablespoonextra virgin olive oil(for cooking, not added to the meatball mixture)
for topping: 1/2 - 3/4 cup sharp cheddar cheeseshredded
for servingoptional: cooked rice of your choice + steamed broccoli
Instructions
Make Meatballs: Put all of the meatball ingredients (except the olive oil) in a large bowl and mix to fully combine. For best results, use your hands to do the mixing. Scoop 1 tablespoon of the meatball mixture and roll into a meatball (recommend using a cookie dough scoop for this). Continue this process with the remaining meatball mixture until all the meatballs are formed.
Cook Meatballs: Bring a large cast iron skillet to a medium-high heat and add the olive oil to coat the bottom of the pan. Add the meatballs to the hot pan and move around to sear the outsides. Drop the heat a little bit and continue cooking meatballs until their internal temperature reaches 165 degrees F (use a meat thermometer) - we used a spatula to keep moving them around the pan, while they finished cooking.
Topping: Right before serving, sprinkle the shredded cheese topping on the meatballs and let it sit for a few minutes to melt.
Serve: Enjoy immediately with your favorite side dishes!
Notes
Dairy Free: use a plant-based butter and dairy-free alternative for the cheddar cheese.
Gluten Free: simply use gluten-free breadcrumbs.
Turkey: feel free to sub in ground beef or ground chicken, if you want!
Storage: leftover meatballs can be kept in an airtight container in the fridge for 4-5 days.
