Easy and delicious apple walnut bars are healthy and perfect for fall!
Ingredients
1½cupscoconut sugar
¾cupcoconut buttersoftened
¾cupcoconut oilsoftened
6tablespoonscreamy almond butter
2teaspoonsvanilla extract
3½cupswhole wheat flour
1cupwalnutschopped
3flax eggs3 Tbl ground flax + 9 Tbl water; whisk and let sit on counter until recipe calls for them
2teaspoonsbaking soda
2teaspoonsground cinnamon
1teaspoonkosher salt
2honey crisp applessliced as thin as possible
2Granny Smith applessliced as thin as possible
Instructions
Prep: Preheat oven to 375℉ and prep the flax eggs; set aside.
Cream Sugar + Butter: In a stand mixer, add 1½ cups coconut sugar, ¾ cup coconut butter, ¾ cup coconut oil, 6 tablespoons creamy almond butter and 2 teaspoons vanilla extract. Mix to combine.
Combine: Add 3½ cups whole wheat flour, 1 cup walnuts, 3 flax eggs, 2 teaspoons baking soda, 2 teaspoons ground cinnamon, and 1 teaspoon kosher salt mix to combine. If the dough is too dry, add some water 1 tablespoon at a time.
Layer: Take a 9x12 sheet pan and lay parchment paper across it so you will be able to lift out your bars. Pour dough into pan and then press firmly into pan so it is evenly spread out. Take all of the apple slices and start making a checkerboard pattern (as shown in pictures).
Bake: Move to the preheated oven to bake for 45 minutes and then check with a toothpick to ensure they are done - otherwise bake for an additional 5 minutes.
Rest + Serve: Let sit in pan for 10 minutes and then carefully lift out of pan and let cool on rack for 10 minutes. Serve with vegan salted caramel sauce, if desired.
