Description

Zucchini Pizza Bites – a super easy recipe for zucchini pizza bites that is ready in minutes! Customizable and kid-friendly!


Ingredients

Scale
  • 1 zucchini, sliced into 1/41/2 inch slices
  • pizza sauce
  • grated cheese of your choice (regular or dairy-free)
  • other toppings: diced onion, mushrooms, pepperoni, olives, etc. 

Instructions

  1. Preheat oven to 400 degrees F. 
  2. Prepare a parchment-lined baking sheet and set aside.
  3. Slice your zucchini and place on the baking sheet.
  4. Add a dollop of pizza sauce on each (about a 1/2 tablespoon).
  5. Top each piece with cheese (regular or dairy-free) and any other toppings you want.
  6. Place in the oven (middle rack) and let bake 5 minutes, or until the cheese is melting.
  7. Remove and let cool slightly. Serve and enjoy! 

Notes

  • Size of zucchini – the size (width) you use doesn’t really matter so much, but if you can find wider ones you can easily fit more toppings on them (like pepperoni, etc.)
  • Servings: this is really a flexible recipe and every zucchini is a different size so use this as a little guide to making your own zucchini pizza bites just the way you want! 
  • Toppings: feel free to use more toppings than just cheese – if you have wider zucchini then it will be easier to fit more on them.
