Description

Roasted Cherry Tomatoes – a super simple roasted cherry tomato recipe that is perfect on grilled bread or served with pasta!


Ingredients

Scale
  • 2030oz cherry tomatoes*
  • 24 tablespoons olive oil (sub avocado oil)
  • kosher salt
  • ground black pepper

Instructions

  1. Preheat oven to 400 degrees F. 
  2. Place tomatoes on a shallow baking sheet. 
  3. Drizzle with olive oil; toss to coat.
  4. Season generously with kosher salt and ground black pepper.
  5. Place in oven, middle rack, and let roast 20-30 minutes or until they are starting to burst. 
  6. Remove and let cool. Serve with grilled bread or in our Cherry Tomato Pasta! 

Notes

  • Cherry Tomatoes: you can really use whatever kind you wish – we used on-the-vine cherry tomatoes + some multi-colored cherry tomatoes for testing this recipe and they turned out so good!
