Description

Sheet Pan Shrimp and Broccoli – a one pan meal that tastes amazing and is done in under 30 minutes!? Yes, please!


Ingredients

Scale
  • 1/21lb fresh broccolini
  • 20 raw jumbo shrimp or prawns
  • 23 tablespoons avocado oil or olive oil
  • 1 teaspoon kosher salt
  • 1 batch of Paleo Teriyaki Sauce

Instructions

  1. Prep: Preheat oven to 415 degrees F. and prepare a large parchment-lined baking sheet.
  2. Bake Broccolini: Trim the bottom 1/2 inch or so off of the stems of the broccolini. Place the broccolini on the prepped sheet pan and drizzle with olive oil; massage with your hands to fully cover them in oil. Sprinkle with salt and toss. Move to the oven for 8 minutes.
  3. Add Shrimp: Remove pan and place shrimp on the other side of the sheet pan and brush lightly with olive and sprinkle with salt. Return to oven for 5 minutes then flip shrimp and cook for an additional 2-3 minutes or until fully cooked.
  4. Serve: Divide between 4 bowls and feel free to serve over rice or homemade cauliflower rice, and a drizzle of Paleo Teriyaki Sauce!

Notes

  • Teriyaki Sauce: option to enjoy with paleo teriyaki sauce, regular homemade teriyaki sauce, or keep it super easy and use your favorite store-bought version.
  • Prawns: If you use large prawns, like I did, they will need to be cook approximately 8-10 minutes; jumbo shrimp will need to be cooked close to 6-8 minutes.
