Description

Thai Chicken Skewers with Creamy Almond Sauce – A fun and delicious weeknight dinner option with an absolutely yummy creamy almond sauce! (Whole30/Paleo)


Ingredients

Scale
  • 12 lbs chicken tenders

Marinade:

  1. 1/2 cup coconut aminos
  2. 2 Teaspoons fish sauce
  3. 2 Teaspoons minced garlic
  4. 1 Teaspoon freshly grated ginger
  5. 2 Tablespoons freshly chopped cilantro
  6. pinch of salt

Sauce:

  1. 1/4 cup coconut aminos
  2. 1 Teaspoon fish sauce
  3. 1 Teaspoon minced garlic
  4. 1 Teaspoon freshly grated ginger
  5. pinch of salt
  6. 2 Tablespoons Georgia Grinders almond butter

Instructions

  1. Combine “Marinade” ingredients in medium bowl and whisk together.
  2. Place chicken into glass container or storage bag and pour marinade over top.
  3. Close tightly and place in refrigerator for at least 30 minutes (or overnight if prepping ahead).
  4. Take wooden or metal skewers and pierce each piece of chicken.
  5. Combine “Sauce” ingredients, whisk, and set aside.
  6. Grill chicken on medium-high heat, 2-3 minutes per side, or until full cooked.
  7. Remove carefully from grill.
  8. Serve chicken with almond sauce.
