Description

Tomato Burrata Salad – the perfect dish for a hot summer night! This tomato burrata salad recipe is light, fresh, and so easy to make!


Ingredients

Scale
  • 12 large beefsteak tomatoes, sliced
  • 48oz fresh burrata, broken into chunks
  • 1/4 cup basil pesto, more if desired
  • 10 cherry tomatoes, halved
  • 1/4 cup fresh basil leaves
  • high-quality extra virgin olive oil
  • kosher salt or sea salt
  • fresh cracked pepper
  • for serving: grilled bread or crostini*

Instructions

  1. Thickly slice beefsteak tomatoes and lay on a platter or large serving plate. 
  2. Top with pieces of burrata, dollops of pesto, halved cherry tomatoes and fresh basil leaves.
  3. Drizzle with your favorite high-quality olive oil and sprinkle with some salt and pepper.
  4. Serve with grilled bread, crostini, crackers or toast and your favorite glass of wine! 

Notes

  • *Gluten-free: feel free to use regular or gluten-free bread/crostini/crackers.
  • Tomatoes: feel free to use whatever tomatoes you have – even better if they come straight out of your garden, farmers market, or CSA!
