- Heirloom Tomatoes – used for their sweeter flavor, softer texture, and their colors are so beautiful! There’s nothing better than fresh in-season tomatoes, feel free to use any variety you love.
- Burrata Cheese – this cheese has a solid mozzarella exterior with a stracciatella-and-cream inside that is very creamy – perfect for spreading on bread or toast with tomatoes.
- Pesto – highly recommend making a homemade pesto sauce for the best flavor, but store-bought pesto can be used too.
Meal Prep Tips
If you are looking to do some prep ahead of serving, you could make the homemade pesto sauce, slice the tomatoes, and grill the bread or bake crostini. Store in separate airtight containers in the fridge. Toasted bread can be kept at room temperature. Assemble when ready to serve!
How To Make Tomato Burrata Salad

Step 1: Grill or toast your bread of choice.

Step 2: Cut the heirloom tomatoes into thick slices and place on the platter.
How To Assemble A Tomato Burrata Salad
Start with large, thick slices of ripe tomato on the serving platter. Open each ball of burrata with a knife, cut into large sections, and place them around the tomatoes. Add dollops of pesto, halves of tomatoes, and fresh basil around the platter trying to make it easy for people to scoop up sections with all those flavors on the crostini or bread.

Step 3: Pile on the pesto, burrata, cherry tomatoes, basil leaves, salt, and pepper.

Step 4: Finally add a drizzle of olive oil over the top and dig in!
Recipe Variations
If you want to change-up this recipe, feel free to add a sweet balsamic glaze on top, some pieces of fresh arugula, sliced red onion, strips of prosciutto, or even a few grilled peaches (similar to our grilled peaches and chicken recipe).

- Prep Tomatoes: Thickly slice 1-2 large heirloom tomatoes and lay on a platter or large serving plate.
- Add Toppings: Top with pieces of burrata, dollops of pesto, halved cherry tomatoes and fresh basil leaves. Drizzle with your favorite high-quality extra virgin olive oil and sprinkle with some kosher salt and freshly cracked pepper.
- Serve: Enjoy with easy grilled bread, oven baked crostini, crackers or toast and your favorite glass of wine!
Notes
- Gluten-free: use regular or gluten-free bread/crostini/crackers.
- Heirloom Tomatoes: feel free to use any variety of heirloom tomatoes you have – even better if they come straight out of your garden, farmers market, or CSA! Of course, if you don’t have heirloom then feel free to use what you have.
- Versatile: this is a very versatile recipe. Feel free to adjust the amounts and some of the ingredients for an epic platter that you will love. Fresh mozzarella cheese and/or a drizzle of a sweet balsamic glaze would also be delicious!
