The Best Tomato Burrata Salad
Late into the summer when tomatoes and fresh basil are bursting out of our garden, it is the perfect time for making this quick and delicious tomato salad recipe for an easy weeknight dinner, lunch on the patio, or to snack on while sipping a mojito! It only takes 15 minutes to prepare and will definitely impress a crowd. We highly recommend that you take the time to grill or toast the bread or crostini, it gives an added crispness that is so so good! We can’t wait for you to try this amazing summer salad!
This easy recipe is very similar to a traditional caprese salad, which is also one of our favorite recipes!
What You Will Need
- fresh whole tomatoes – during this time of year we always have fresh, juicy tomatoes coming out of the garden.
- creamy burrata cheese – a light & creamy cheese, similar to fresh mozzarella cheese but definitely next level of deliciousness.
- basil pesto sauce – option to pick-up some store-bought pesto sauce at the local grocery stores or you can easily make a homemade pesto sauce.
- cherry tomatoes or grape tomatoes – easy for adding to bread and provide another great tomato flavor and mix of colors!
- fresh basil leaves – a fresh herbs that are always good with fresh tomatoes and cheese.
- extra virgin olive oil – perfect for drizzling over the top, we recommend using a really good quality olive oil here.
- kosher salt or flaky sea salt & fresh cracked black pepper – simple seasonings to sprinkle on top!
- sliced bread – we cannot recommend our grilled bread enough (so simple and so good) or you can easily grill some crusty bread, use crackers, or other toast for serving.
How To Make Tomato Burrata Salad
The first steps to making this simple salad are to grill or toast your bread of choice. We love using big slices of sourdough bread and some smaller crostini.
While those cool just a bit, you can use a sharp knife to cut your tomatoes into thick slices.
Then all you have to do is assemble your large platter. Place the large tomato slices on the bottom and start piling on the pesto, burrata, cherry tomatoes, basil leaves, salt, and pepper.
Finally add the drizzle of olive oil over the top and dig in!

- What is burrata cheese: a fresh Italian cheese that’s made with mozzarella and cream. The inside is made of stracciatella and cream which is a very soft, creamy texture and the outer shell is more of a solid cheese.
- Variations: we love the recipe card as-is, but if you are looking to change it up at all you could add a drizzle of balsamic glaze or balsamic vinegar, or some fresh arugula, red onion, grilled peaches, or prosciutto.
- Make ahead of time: this is a pretty quick and easy salad, but if you are looking to do some prep ahead of serving you could make the pesto (if you are making your own), slice the tomatoes, and grill the bread. Just make sure you store each ingredient in a separate airtight container in the fridge. The grilled breads can just be kept at room temperature. You don’t want to put everything together until you are ready to serve.

- 1–2 large beefsteak tomatoes, sliced
- 4–8oz fresh burrata, broken into chunks
- 1/4 cup basil pesto, more if desired
- 10 cherry tomatoes, halved
- 1/4 cup fresh basil leaves

- kosher salt or sea salt

Instructions
- Thickly slice beefsteak tomatoes and lay on a platter or large serving plate.
- Top with pieces of burrata, dollops of pesto, halved cherry tomatoes and fresh basil leaves.
- Drizzle with your favorite high-quality olive oil and sprinkle with some salt and pepper.
- Serve with grilled bread, crostini, crackers or toast and your favorite glass of wine!

- *Gluten-free: feel free to use regular or gluten-free bread/crostini/crackers.
- Tomatoes: feel free to use whatever tomatoes you have – even better if they come straight out of your garden, farmers market, or CSA!
