A flavorful, delicious and easy pork meatball recipe that is perfect for meal prep! Serve as-is or in a yummy rice bowl with spicy mayo!
Ingredients
1lbground pork
1heaping tablespoon fresh cilantrominced
1/4cupgreen onionsminced (white part only)
2teaspoonsgarlicminced
1/2teaspoonfish sauce
1-2teaspoonsgarlic chili sauce
1tablespoonsoy saucesub Tamari for gluten-free
1tablespoonlemongrass paste
1/4cupbreadcrumbsreg. or gluten-free
1/2teaspoonkosher salt
1/8teaspoonground black pepper
Instructions
Combine: Add Pork Meatball ingredients to mixing bowl and combine.
Make Meatballs: Take 1 1/2 tablespoons at a time and form into meatballs.
Cook Meatballs: Bring a large cast iron skillet to medium-high heat. Sear meatballs on all sides and then move around pan until fully cooked, approx. 10-15 minutes. Pork is fully cooked when it reaches an internal temperature of 145 degrees F (use a meat thermometer).
