Blend: In a blender, add ¾ cup unsweetened almond milk, ½ - 1 cup cold brew coffee, 3 tablespoons pumpkin puree, 1-3 tablespoons real maple syrup, 2 teaspoons pumpkin pie spice, and 1 teaspoon vanilla extract. Blend until smooth.
Pour: Pour pumpkin cold brew mixture into a glass over ice cubes.
Enjoy: Add some whipped cream and sprinkle with some pumpkin spice!
Notes
Taste and adjust: I would start with a tablespoon or two of maple syrup then blend, then add additional maple syrup if needed!
dairy-free: Make this completely dairy-free by using unsweetened almond milk and dairy-free whipped cream.
Add-in: feel free to add in some collagen if you want!
