This quick & easy Street Corn Chicken Salad brings all the traditional street corn flavor to a creamy chicken salad. Enjoy by itself, on a croissant, in a wrap, or on bread!
Make Street Corn: In a large bowl, add 3 cups corn kernels, ¾ cup mayo, ½ cup feta cheese, ⅓ cup red onion, ¼ cup cotija cheese, ¼ cup fresh cilantro, 2 tablespoons fresh lime juice, 1 tablespoon garlic, 1 teaspoon chili powder, ¼ teaspoon paprika, ¼ teaspoon kosher salt, and ⅛ teaspoon ground black pepper. Mix to fully combine.
Add Chicken: Add 3 cups cooked, shredded chicken to the street corn mixture and mix to combine.
Adjust: Taste and feel free to add more lime juice for more flavor, mayo to make it creamier, or any flavors as desired.
Serve: Enjoy any way you want (as-is, on a croissant, in a lettuce wrap, etc) or store in the fridge for later!
Notes
Dairy-Free: use dairy-free alternatives for the feta cheese and cotija cheese (if you can't find a dairy-free cotija cheese, just sub in more dairy-free feta crumbles).
Chicken: we used rotisserie chicken here and it worked really well. You could also make stove top poached chicken.
Storage: keep this chicken salad in an airtight container in the fridge for 3-4 days. A great option for meal prep!
