Coconut Cauliflower Rice – jazz up your cauliflower rice with this coconut cauliflower rice recipe! The perfect side dish!


  • 12 teaspoons olive or avocado oil
  • 12oz cauliflower rice
  • 1/41/2 cup coconut milk
  • 12 teaspoons lime juice
  • pinch of kosher salt


  1. Bring a cast iron skillet to medium-high heat.
  2. Add oil to pan and swirl to coat. 
  3. Add cauliflower rice and move around the pan until it is warm all the way through. 
  4. Add coconut milk, lime juice and salt. Stir to combine.
  5. Taste and adjust seasoning, as-needed.
