Making cauliflower rice at home is super quick and easy, but sometimes you need to jazz it up a bit! This coconut cauliflower rice is just that – the perfect way to level up cauliflower rice with so much great flavor. It’s super simple and a great addition to so many of your favorite recipes.
What You Will Need
- olive or avocado oil – a swirl in the pan helps to cook up the cauliflower rice.
- cauliflower rice – just grab your favorite from the store or make homemade cauliflower rice!
- coconut milk – brings all that great coconut flavor – we love this Thai Kitchen Coconut Milk!
- lime juice – a splash helps to bring out all the great flavors.
- kosher salt – a pinch for some added seasoning.
Making vs. Buying Cauliflower Rice
- Personally, I think the best way to enjoy cauliflower rice is to make my own homemade cauliflower rice by grating a head of fresh cauliflower. For me this just results in a more rice-like texture.
- Yes, you can definitely buy cauliflower rice! Most grocery stores now carry cauliflower rice or “riced cauliflower” – it also comes frozen! Just check with your store!
How To Make Coconut Cauliflower Rice

Step one – drizzle some olive or avocado oil in a pan and add cauliflower rice to warm thoroughly.

Step two – add the rest of your ingredients.

Step three – stir to combine.

Step four – enjoy!

Ingredients
- 1-2 teaspoons olive oil, sub avocado oil
- 12 ounces cauliflower rice
- ¼ – ½ cup coconut milk
- 1-2 teaspoons lime juice
- pinch kosher salt
Instructions
- Warm: Bring a cast iron skillet to medium-high heat. Add 1-2 teaspoons olive oil to pan and swirl to coat. Add 12 ounces cauliflower rice and move around the pan until it is warm all the way through.
- Combine: Add ¼ – ½ cup coconut milk, 1-2 teaspoons lime juice and a pinch kosher salt. Stir to combine.
- Adjust: Taste and adjust seasoning, as-needed.
- Serve: Enjoy immediately!
