Dill Pickle Pasta Salad

Description

This is going to be your new favorite pasta salad and will be on repeat at cookouts! Get this Dill Pickle Pasta Salad on your summer menu!


Ingredients

Dill Pickle Pasta Salad:

  • 1 lb bowtie pasta, cooked al dente (reg or gluten-free)
  • 23 cups Claussen pickle spears, remove seeds + cut into 1/2 inch chunks
  • 1/4 cup white onion, halved and sliced
  • heaping 1/4 cup fresh dill, chopped
  • 1/2 teaspoon kosher salt
  • fresh cracked black pepper 

Dressing:

  • 1/2 cup mayo
  • 1/2 cup sour cream (reg or gluten-free)
  • 23 tablespoons pickle juice
  • 23 teaspoons garlic, minced
  • 2 teaspoons dijon mustard
  • salt and pepper, to taste

Instructions

  1. Cook Pasta: Cook pasta al dente according to package directions. 
  2. Mix Sauce: Meanwhile, combine Dressing ingredients in a mixing bowl.
  3. Prep Pickles: Take the pickle spears and cut off the mushy seeds. Chop the rest of the spear into 1/2 inch chunks.  
  4. Combine: Strain pasta and rinse with cold water. Transfer to large bowl along with the chopped dill pickles, white onion, fresh dill, salt, and pepper. Toss to combine.
  5. Taste: Once everything is combined, taste, and add additional salt, chopped pickles or dill, as desired. The pickles are already fairly salty so I erred on the side of not adding too much salt – adjust per your liking. 
  6. Serve: Serve at your favorite cookout with some grilled brats and corn on the cob

Notes

  • Optional Add-Ins: feel free to add in a hard-boiled egg or some small cubed colby jack cheese, if you want to beef this up a bit. We tested both and, to be honest, you couldn’t really taste their flavors, just so you know! 
  • Storage: the pasta will naturally soak up the sauce as it sits, so feel free to add in a tablespoon or two of pickle juice to help revive it after sitting for a while. 
  • Gluten-Free: feel free to use your favorite gluten-free noodle here!
  • Dairy-Free: use a dairy-free sour cream to make this dairy-free.
