Description

Oven Baked Meatballs – a seriously delicious baked meatballs recipe that is perfect for meal prep!!  Toss in your favorite sauce and dinner is ready!


Ingredients

Scale
  • 1 1/2 pound ground beef
  • 1/4 cup almond flour
  • 1 egg
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried basil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper

Instructions

  1. Preheat oven to 375 degrees F and prepare a parchment-lined baking sheet.
  2. Combine all ingredients in medium mixing bowl and mix thoroughly (using your hands is usually the easiest).
  3. Take a heaping tablespoon of the meatball mixture and use your hands to roll it into a meatball. Continue until all the meat is used (you should have around 20 meatballs).
  4. Place meatballs on the prepared baking sheet, approximately 1/2 – 1 inch apart.
  5. Sprinkle the tops lightly with salt and pepper.
  6. Cook for 24 minutes or until cooked through and golden brown.
  7. Serve any way you want – we love them on spaghetti noodles with marinara sauce!

Notes

  • Almond flour: option to substitute this with bread crumbs or panko crumbs.
  • Baking sheet: you can also cook them in a mini muffin tin cups.
  • Storage: leftover meatballs can be placed in an airtight container in the fridge for up to 5 days.
  • Freezing: remove from oven and let cool completely. Then, set cooled meatballs on clean baking sheet and place in the freezer for at least an hour. Then place frozen meatballs in a storage bag (the silicone Stasher Bags work well) and keep frozen up to 3 months.
