Description
Strawberry Spinach Salad – A classic summer salad or holiday side salad made with simple ingredients and the BEST homemade balsamic dressing!!

			Balsamic Dressing:
- 1/4 cup + 2 tablespoons extra virgin olive oil
 - 2 tablespoon balsamic vinegar
 - 1 teaspoon garlic, minced
 - 1/2 teaspoon dijon mustard
 - 1 tablespoon unsweetened almond milk
 - pinch of kosher salt and ground black pepper
 
Strawberry Spinach Salad
- 4 cups (packed) fresh spinach
 - 1/2 cup walnuts, chopped
 - 1/2 red onion, sliced
 - 1 cup fresh blueberries
 - 2 cups fresh strawberries, sliced
 
Instructions
Balsamic Dressing:
- Combine ingredients in mason jar. Close the top tightly and shake to combine. Alternatively place in medium mixing bowl and whisk.
 
Strawberry Spinach Salad
- Divide spinach between 4 bowls.
 - Add walnuts, red onion, blueberries and strawberries to each bowl.
 - Drizzle with Balsamic Vinaigrette (or other dressing of your choice) and serve immediately.
 
Notes
- Protein: Feel free to add some grilled chicken or steak!
 - Candied Walnuts: Candied walnuts (made with honey) are also a fun addition.
 - Avocado: If you have an avocado laying around feel free to dice that up and add it in too!
 - Dressing Options: If you aren’t necessarily concerned with Whole30/paleo, I also love throwing some poppyseed dressing on this salad!
