Description

Strawberry Spinach Salad – A classic summer salad or holiday side salad made with simple ingredients and the BEST homemade balsamic dressing!! 


Ingredients

Balsamic Dressing:

  • 1/4 cup + 2 tablespoons extra virgin olive oil
  • 2 tablespoon balsamic vinegar
  • 1 teaspoon garlic, minced
  • 1/2 teaspoon dijon mustard
  • 1 tablespoon unsweetened almond milk
  • pinch of kosher salt and ground black pepper

Strawberry Spinach Salad

  • 4 cups (packed) fresh spinach
  • 1/2 cup walnuts, chopped
  • 1/2 red onion, sliced
  • 1 cup fresh blueberries
  • 2 cups fresh strawberries, sliced

Instructions

Balsamic Dressing:

  1. Combine ingredients in mason jar. Close the top tightly and shake to combine. Alternatively place in medium mixing bowl and whisk.

Strawberry Spinach Salad

  1. Divide spinach between 4 bowls.
  2. Add walnuts, red onion, blueberries and strawberries to each bowl.
  3. Drizzle with Balsamic Vinaigrette (or other dressing of your choice) and serve immediately.

Notes

  • Protein: Feel free to add some grilled chicken or steak!
  • Candied Walnuts: Candied walnuts (made with honey) are also a fun addition.
  • Avocado: If you have an avocado laying around feel free to dice that up and add it in too!
  • Dressing Options:  If you aren’t necessarily concerned with Whole30/paleo, I also love throwing some poppyseed dressing on this salad!
