Strawberry Spinach Salad – An amazing summer salad with the BEST homemade balsamic dressing!!

Easy Strawberry Spinach Salad Recipe

Time to put all those summer berries to good use and make this salad! So light and refreshing with just the right amount of sweetness. The homemade balsamic dressing really is the cherry on top of this one! This is so simple to whip up at home and will trump any store-bought salad dressing. This is one of our favorites for a weekend lunch/dinner or you can easily prep the ingredients ahead of time for a lunch on-the-go!
What You Will Need
This salad has:
- Fresh Spinach – the greens of the salad which are also packed with nutrients
- Walnuts – providing protein and a little crunch
- Red Onion – giving the salad a little bite to keep things interesting
- Blueberries – adding a little sweetness that everyone loves
- Strawberries – deliciously sweet and so pretty

And the most delicious homemade balsamic dressing that is made with items you probably already have at home:
- extra virgin olive oil
- balsamic vinegar
- garlic
- dijon mustard
- almond milk
- pinch of salt and pepper
Just toss these ingredients in a mason jar, fasten the lid, and give them a shake!!

- Can I add other items to this salad? Absolutely! Get creative! A few suggestions would be a little avocado, candied walnuts (to give a little more sweetness), or some protein like chicken or steak.
- Can I use a different salad dressing instead of making one? Yes! We wanted to show you how easy it can be to make one at home but you can absolutely skip that and buy one. We love this one! And if you aren’t necessarily concerned with Whole30/paleo, I also love throwing some poppyseed dressing on this salad! I haven’t perfected a homemade version YET, but this store bought brand is SO good and so is this one!
- Can I meal prep this salad? Definitely! I would just hold off on the dressing until you are ready to eat the salad, otherwise it might get a bit soggy. If you add a protein, I would also keep that separate until you are ready to eat.

Ingredients
Balsamic Dressing:
- 1/4 cup + 2 tablespoons extra virgin olive oil
- 2 tablespoon balsamic vinegar
- 1 teaspoon garlic, minced
- 1/2 teaspoon dijon mustard
- 1 tablespoon almond milk
- pinch of salt and pepper
Strawberry Spinach Salad
- 4 cups (packed) fresh spinach
- 1 cup chopped walnuts
- 1/2 red onion, sliced
- 1 cup fresh blueberries
- 2 cups fresh strawberries, sliced
Instructions
Balsamic Dressing:
- Combine ingredients in mason jar. Close the top tightly and shake to combine. Alternatively place in medium mixing bowl and whisk.
Strawberry Spinach Salad
- Divide spinach between 4 bowls.
- Add walnuts, red onion, blueberries and strawberries to each bowl.
- Drizzle with Balsamic Vinaigrette (or other dressing of your choice) and serve immediately.
Notes
- Protein: Feel free to add some grilled chicken or steak!
- Candied Walnuts: Candied walnuts (made with honey) are also a fun addition.
- Avocado: If you have an avocado laying around feel free to dice that up and add it in too!
