Description

Our Slow Cooker Chicken Fajitas recipe is an easy, set-it-and-forget-it meal that the whole family will love! Perfect weeknight dinner!


Ingredients

Scale
  • 1 batch fajita seasoning (homemade or store-bought)
  • 4 bell peppers, sliced
  • 1 sweet yellow onion, sliced
  • 2 tablespoons garlic, minced
  • the juice of one lime
  • 23 roma tomates, quartered
  • 4 boneless, skinless chicken breasts (approx. 2 lbs)

Instructions

  1. Prep: mix together the homemade fajita seasoning ingredients, if using.
  2. Crock Pot: Add peppers, onions, tomatoes, garlic and lime juice to slow cooker. Toss to combine. Place chicken on top and sprinkle with seasoning.
  3. Cook: on high setting for 2.5-3 hours (or until chicken is fully cooked) or on low setting for 4-6 hours.
  4. Shred + Serve: Remove chicken and place on large platter or cutting board. Use two forks to shred and return meat to slow cooker.  Mix to combine. Serve immediately.

Notes

  • Serving Suggestions: serve on your favorite flour tortillas, corn tortillas, or make a fajita bowl with white rice, brown rice or cauliflower rice!
  • Topping Options: fresh guacamole, dairy-free sour cream, fresh cilantro, etc.
  • Storage: leftover chicken fajitas can be stored in an airtight container in the fridge for 4-5 days.
