How To Make Slow Cooker Chicken Fajitas

Step 1 – Put all of the fresh ingredients and half the seasoning in the crockpot.

Step 2 – Mix it up, add the chicken on top and the rest of the seasonings.

Keeping the cook time on the lower side will help prevent the bell peppers from getting too soggy.

Step 3 – Cover and let it cook for 3 hours on high or 4-6 hours on low.

Step 4 – Remove the chicken, shred, return to the pot, toss, and serve!

It can be done but is not recommended. The cook time is much longer and as the chicken cooks it will release water into the slow cooker making the whole dish very watery.
Chicken breasts are a more lean meat that works really well for this slow cooking method. Boneless, skinless chicken thighs can be used but they will render significantly more fat and cook faster.
Yes, the peppers can be fresh or frozen because they don’t retain as much water as the chicken would.

- 1 ounce fajita seasoning, homemade fajita seasoning or store-bought
- 3 bell peppers, sliced
- ½ sweet yellow onion, sliced
- 1 roma tomato, cut into wedges
- zest of 1 lime
- juice of 1 lime
- 2 tablespoons garlic, minced
- 4 boneless, skinless chicken breasts, approximately 2 pounds
- kosher salt and ground black pepper
Serving Suggestions:
- tortillas, regular or gluten-free
- sour cream
- fresh cilantro, chopped
Instructions
- Prep: Mix together the homemade fajita seasoning ingredients, if using.
- Crock Pot: In a slow cooker, add sliced peppers, sliced onions, tomatoes, zest of 1 lime, juice of 1 lime, 2 tablespoons garlic, and half of the fajita seasoning. Toss to combine. Place 4 boneless, skinless chicken breasts on top and sprinkle with a little kosher salt and ground black pepper and the remaining fajita seasoning.
- Cook: Cover and cook on HIGH setting for 2 ½ – 3 hours (or until chicken is fully cooked) or on LOW setting for 4-6 hours.
- Shred + Serve: Remove chicken and place on large platter or cutting board. Use two forks to shred and return meat to slow cooker. Mix to combine. Serve immediately!

- Serving Suggestions: serve on your favorite flour tortillas, corn tortillas, or make a fajita bowl with white rice, brown rice or homemade cauliflower rice!
