Description

Spicy Shrimp Sushi Bowl – this easy sushi bowl recipe is packed with flavor and it’s perfect for a quick weeknight meal!


Ingredients

Scale
  • 2 cups cooked sushi rice (stovetop or Instant Pot)
  • 1012 large shrimp (pre-cooked or raw)
  • 2 tablespoons garlic chili sauce
  • 12 teaspoons avocado oil (or extra virgin olive oil)
  • 1 cup diced mango (fresh or canned)
  • 1/2 cup chopped fresh cilantro
  • 1 avocado, sliced
  • garnish: sesame seeds
  • soy sauce

Instructions

  1. Sushi Rice: cook sushi rice on the stove top or make Instant Pot sushi rice.
  2. Spicy Shrimp: In a medium bowl, toss shrimp and toss in garlic-chili sauce. Bring a small skillet to a medium-high heat and add avocado oil to coat the bottom. Add shrimp and move around in pan until pink-colored and heated throughout (raw shrimp will need to cook longer than precooked shrimp).
  3. Build Rice Bowls: Take a bowl and add rice, cilantro, mango, shrimp and avocado.
  4. Sprinkle with sesame seeds.
  5. Serve with soy sauce and additional garlic-chili sauce, if desired.

Notes

  • Spice Level: feel free to adjust the amount of garlic chili sauce to be more or less, depending on how spicy to like your food!
  • Storage: any leftovers can be stored in an airtight container in the fridge for 3-4 days.
