Description

Best Eggs Benedict Recipe – a delicious and easy recipe for the most amazing eggs Benedict recipe!  Perfect for your next brunch or Mother’s Day breakfast!

Ingredients

Scale
  • 1/2 english muffin, toasted (reg. or gluten-free)
  • 12 slices canadian bacon
  • 1/4 avocado, sliced
  • 1 egg, poached
  • 12 tablespoons hollandaise sauce (more if desired)
  • 1 tablespoon goat cheese, crumbled

Instructions

  1. Canadian bacon: quickly warm the slices of Canadian bacon in a small skillet on the stovetop or in the microwave until warmed through.
  2. Poach eggs: Add 3-4 inches of water to a small or shallow saucepan. Crack an egg into a glass measuring cup or small bowl.  Set the pot of water on the stovetop and turn to medium/high heat. hen the water is just about to boil (you will see bubbles start to form at the bottom of the saucepan) take the glass measuring cup with the egg and dip the measuring cup into the water – don’t dump out the egg – but allow some of the hot water to fall over the edge of the measuring cup, enveloping the egg.  This will start to cook the egg immediately (you will notice it start to turn white).  Let the egg cook for 10-30 seconds in the cup and then slip egg completely into the warm water and continue to cook the egg for 3-4 minutes. Carefully remove with a slotted spoon.
  3. Assemble: place the english muffin on a small plate and top with Canadian bacon, the avocado slices, poached egg, and then pour the hollandaise sauce on top. Finally, add a sprinkling of goat cheese and enjoy!
