Description

Shrimp Rice Bowls – an easy, delicious and healthy recipe for shrimp rice bowls – cook shrimp on the grill or stove top!


Ingredients

Scale
  • 12 jumbo shrimp, deveined and shelled
  • 12 tablespoons ghee or olive oil
  • 12 teaspoons kosher salt
  • 1/2 teaspoon ground black pepper
  • 2 cups cooked brown rice
  • 1 avocado, diced
  • 2 tablespoons soy sauce (or tamari or coconut aminos)
  • chopped cilantro (for garnish – optional)

Instructions

  1. Pat shrimp dry and season with kosher salt and pepper.
  2. Place large cast iron skillet on stove and bring to medium-high heat.
  3. Add some of the olive oil or ghee and swirl to coat the pan.
  4. Place shrimp in hot pan and let cook approx. 1-2 minutes per side or until meat is no longer translucent. Add additional oil or ghee, as needed, to keep pan from drying out.
  5. Remove shrimp from pan.
  6. Divide rice, avocado and shrimp between two bowls. 
  7. Drizzle with soy sauce (or tamari or coconut aminos) and top with a little cilantro. 
  8. Enjoy!
