Shrimp Rice Bowls - an easy, delicious and healthy recipe for avocado shrimp rice bowls - cook shrimp on the grill or stove top!
Ingredients
12jumbo shrimpdeveined and shelled
1teaspoonkosher salt
½teaspoonground black pepper
1-2tablespoonsghee sub olive oil or butter
2cups brown ricecooked
1avocadodiced
2tablespoonssoy sauceor tamari or coconut aminos
fresh cilantrochopped (optional garnish)
Instructions
Season Shrimp: Pat 12 jumbo shrimp dry and season with 1 teaspoon kosher salt and ½ teaspoon ground black pepper.
Cook Shrimp: Place large cast iron skillet on stove and bring to medium-high heat. Add 1-2 tablespoons ghee or olive oil and swirl to coat the pan. Place shrimp in hot pan and let cook approx. 1-2 minutes per side or until meat is no longer translucent. Add additional oil or ghee, as needed, to keep pan from drying out. Remove shrimp from pan.
Build Bowls: Divide 2 cups brown rice, 1 avocado and shrimp between two bowls.
Serve: Drizzle with 2 tablespoons soy sauce (or tamari or coconut aminos) and top with a little fresh cilantro. Enjoy!
