Mussels in White Wine Sauce with Smoked Paprika and Crusty French Bread
Mmmmmm….. mussels in a buttery, white wine sauce that you can soak up with warm, crusty French bread. Try and tell me you don’t want to eat this all up. I know some people aren’t “mussel people” – frankly I don’t associate with those people – kidding! (kind of), but even those people would like this – I swear. I don’t know what is the best part, the buttery mussels or the bread soaked in the amazing, amazing sauce. Did I essentially drink some of the sauce with a large spoon – maybe. Don’t judge.

For this post, I truly went away from my comfort zone. I would say most times, when I create a recipe I come up with a general concept or ingredient and start brainstorming ideas and I then do quite a bit of research to get inspiration and to further develop and fine tune that idea. In the end, I put quite a bit of planning and thought behind my recipes. This was a fly-by-the-seat-of-my-pants kind of recipe. As in, I was piecing it together in the grocery store….. Not always a good idea. I am pretty proud of the result, though I plan on re-visiting this recipe to fine-tune it. I ended up purchasing smoked salmon (Lox) and, to be quite honest, it was a little too “smokey”. I think next time I will try cured salmon or even a sushi grade salmon for a more pure salmon flavor. What I like about this recipe is the variety it provides, the different ways you can combine the different components. The acid in the lemon vinaigrette, the salt of the salmon and the sweet, creaminess of the avocado, cream cheese and/or beets. It is really a recipe you can have fun with and I hope you do!

Okay is there anything better than the smell (or taste) of roasted garlic? Especially when it is roasted, bathed in olive oil, butter and SALT!!! I will tell you there is not. The first time I had roasted garlic I was on an informational interview (yes, you read that right) with an intellectual property attorney and she raved about how amazing this garlic was. I think my internal reaction was “What? You just put a whole piece of garlic in your mouth?” Of course, trying to remain professional, I obliged and tried this new-fangled, trendy appetizer….. and boy was I blown away. Not only did I make a new friend, colleague, contact, but I also received a wake-up call. Roasted Garlic is AMAZING! Spreading it on a warm baguette is probably one of the best ideas ever. Pair that with a glass of wine and some fresh parmesan cheese – I am in heaven. Just make it this weekend – and tell me how amazing it is!

Broiled Tomatoes with Onion and Parmesan Cheese
This recipe is one of my go-to’s for a great appetizer. I learned it from my super-amazing step-mom and have some very fond memories of her whipping these up for my brother and me. The combination of the fresh tomato with the creamy mayo and a little spice from the onion, makes this a savory, yet light appetizer or side dish for any meal. Additionally, it is fairly quick to put together and requires ingredients most people have stocked in their kitchens.
