Description

Cauliflower Mash – a delicious, creamy and flavorful cauliflower mash recipe! The perfect side dish for any meal!


Ingredients

Scale
  • 1 head of cauliflower, cut into florets
  • 4 tablespoons of butter (sub ghee or vegan butter)
  • 1/3 cup unsweetened almond milk, more to thin if needed
  • 2 teaspoons olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon garlic salt
  • 2 tablespoons of fresh chives, roughly chopped

Instructions

  1. Clean cauliflower, cut off stalk and leaves. Cut up meat of cauliflower into florets.
  2. Take large pot and add enough water so there is about an inch in the bottom.
  3. Add cauliflower, cover and bring to boil.
  4. Continue to boil until cauliflower is very soft and will blend easily.
  5. Remove from heat and let cool slightly.
  6. Place cauliflower into blender along with the butter, milk, olive oil, salt and garlic salt. Cover blend on HIGH 2-3 minutes. Add additional splashes of milk, as needed, to reach desired consistency. Taste and adjust salt, as-needed.
  7. Add chives and pulse 1-2 times to combine – don’t over-blend or it might turn a little green in color.
