Butter and Chive Cauliflower Mash

  • 1 head of cauliflower
  • 2 Tablespoons of fresh, chopped chives
  • 4 Tablespoons of ghee
  • 2/3 cup unsweetened almond milk
  • 1 Teaspoon olive oil
  • 1/2 Teaspoon kosher salt
  • 1/2 Teaspoon Lawry’s Salt
  • 1/4 Teaspoon garlic salt
  • Dash of ground oregano


  1. Clean cauliflower, cut off stalk and leaves
  2. Cut up meat of cauliflower into small chunks
  3. Take large pot and add enough water so there is about an inch in the bottom
  4. Add cauliflower, cover and bring to boil
  5. Continue to boil until cauliflower is very soft and will blend easily
  6. Remove from heat and let cool slightly
  7. Place cauliflower into blender, again ensure it is not too hot
  8. Add butter, olive oil and half of the milk
  9. Cover blender with towel for safety and pulse a few times
  10. Then puree for about a minute
  11. Add salt, Lawry’s salt, garlic salt, oregano and chives
  12. Puree for another minute
  13. Check consistency and add remaining milk to reach desired consistency; Add per your discretion
  14. Puree for another 2-3 minutes to really get a silky consistency
