These Champagne Jello Shots were inspired by my favorite holiday drink, champagne! I just love the subtle sweetness and bubbles that I just had to try my hand at jello champagne shots. Add some sparkle and you’ve got yourself the cutest little cocktail for your next celebration.
Easy Champagne Jello Shots Recipe
These aren’t the jello shots of your youth, my friends. Because these actually taste good! We played around with the recipe a few times and finally landed on the perfect amount of sweetness that lets the champagne shine through without being too sweet. These would be perfect to serve at Christmas, a new year’s eve party, or your next bachelorette party.
What You Will Need
- fresh raspberries – feel free to omit or choose a berry of your choice.
- edible gold glitter – The perfect way to make these the most festive little cocktail. You could also use edible gold leaf, but the whole drink won’t be as sparkly.
- 12 portion cups with lids – These were the perfect size for us.
- sweet champagne – We used Martini + Rossi Asti. You could get one regular sized bottle of champagne or they also sell these in mini bottles so that you can save the leftover champagne for another special occasion.
- fresh lemon juice – Just a bit to balance out flavors.
- granulated sugar – Adds the right amount of sweetness without becoming overwhelming.
- unflavored gelatin – You can find this in the baking aisle at your local grocery store.
- vodka – Be sure to grab unflavored to allow all of the other flavors to shine through.
How To Make Champagne Jello Shots
The first step is to gather all of your ingredients, making sure the champagne and vodka have been chilled prior to using.
Next, prep the cups by adding 2-3 raspberries in each cup an then a tiny bit of edible glitter. We filled our 1/8 teaspoon halfway and that seemed to be the right amount.
Now add 1 cup of champagne, the lemon juice, and granulated sugar to a small saucepan. Stir to combine and then rip open the envelopes of gelatin and add in the powder, stir again, and let everything sit for about 5 minutes. This allows the gelatin to bloom, which is just a fancy way of saying that the gelatin hydrates or softens so that it becomes smooth vs lumpy during the hardening phase.
Once the gelatin has bloomed, place the saucepan over medium heat and gently warm the jello mixture until the gelatin has dissolved. Once the mixture begins to gently simmer, remove the pot from the heat and place it in the refrigerator for a couple of minutes to cool. It took ours about 5 minutes. Then add the remaining 3/4 cup of cold champagne to the sauce pan along with the vodka and stir gently.
Carefully pour the gelatin mixture into each portion cup. Then place all of your filled cups onto a cookie sheet and transfer them all into the refrigerator for at least 2 hours to allow them to set.
Pro Tip
The best way to pour the champagne mixture is to use a vessel with a good pouring spout like a measuring cup. This ensures every last drop will make it into the small plastic cups.
Use a small spoon to scoop out this yummy jello concoction and enjoy!
These fun jello shots would be perfect for bachelorette parties, new years celebrations, or anytime you’re in the celebratory mood.
Recipe FAQs and Tips
- Serving options: While we only tested this jello shot recipe in portion cups, there’s no reason to believe that they wouldn’t work in other molds. A silicone mold might make it tricky to get the jello out smoothly, but give it a try and let us know how it worked!
- Portion Cup Size: We grabbed 2.5 oz jello shot cups, which made for 2 bites to get the whole jello shot down. Feel free to try a different size knowing that you might want to cut down on the number of berries used.
- N/A Option: A great way to make this a recipe one that the whole family can enjoy is to sub the champagne for sparkling fruit juice and use cold water in place of vodka.
- Make Ahead: Make these a few days before serving! Just know that since there’s fresh fruit in them, it’s probably best to eat them sooner than later.
Made these champagne jell-o shots and loved them?! We would love it if you would take a minute and leave a star rating and review – it is also helpful if you made any substitutions or changes to the recipe to share that as well. THANK YOU!

Description
Your new favorite New Year’s Eve treat! These Champagne Jello Shots are festive and delicious with the addition of some beautiful edible glitter and fresh raspberries. Feel free to make non-alcoholic too!
Ingredients
- 36 fresh raspberries
- edible gold glitter
- 12 portion cups with lids (2.5oz each)
- 1 3/4 cups sweet champagne (we used Martini + Rossi Asti), cold + divided
- 1 tablespoon lemon juice
- 1/3 cup granulated sugar
- (2) .25oz packets unflavored gelatin
- 1/4 cup vodka
Instructions
- Prep Portion Cups: Place 2-3 raspberries in each portion cup. Sprinkle with a pinch of edible glitter. Set aside.
- Bloom Gelatin: Add 1 cup champagne, lemon juice and granulated sugar to a saucepan. Stir to combine. Add unflavored gelatin and stir. Let sit 5 minutes to allow the gelatin to bloom.
- Heat + Cool Mixture: Place saucepan over medium heat and gently heat until gelatin has dissolved and the liquid is just barely about to start simmering. Remove from heat and place in the refrigerator for 5 minutes to cool. Add remaining 3/4 cup cold champagne to saucepan along with vodka. Gently stir to combine.
- Pour + Refrigerate: Divide equally between the portion cups pouring over the raspberries and glitter. Transfer to the refrigerator and let set for a minimum of 2 hours. Serve with a spoon and enjoy!
Notes
- Portion Cup Options/Alternatives: we only tested these using the portion cups, but I don’t see why these wouldn’t work in other molds. The only issue I foresee with a silicone option is getting the jello out smoothly – let us know if you try something different!
- Portion Cup Size: each portion cup here was 2.5oz, feel free to use something smaller, just know you may not be able to fit as many raspberries in and you will end up with more shots.
- Non-Alcoholic: want to make a batch for the kiddos or someone who doesn’t want to drink alcohol – simply swap out the champagne for sparkling apple juice and add water instead of vodka.
- Sweet Champagne/Asti: we tested this with a Martini + Rossi Asti and the flavor was perfect – if you use a less sweet champagne you may want to add a bit more sugar to account it.
- Storage: store with the caps on the portion cups in the refrigerator.
- Make Ahead: since these have fruit in them, it is best to eat them within 2-3 days of making.
